How to Tell if an Egg Is Fresh: 4 Tests

The float, shake, plate and smell tests, the reasoning behind each, and how long unwashed farm eggs really keep in Pakistani conditions.

Egg cartons in Pakistan rarely carry a reliable lay date, so you are usually on your own. These four tests take seconds and cost nothing.

1. The float test

Put the egg in a glass of cold water. A very fresh egg sinks and lies flat on its side. As an egg ages, moisture escapes through the shell and the air cell inside grows, so the egg tilts, then stands on its narrow end. An egg that floats has an air cell large enough that you should not eat it.

Standing upright does not mean spoiled. It means a week or two old, which is perfectly good for boiling and baking.

2. The shake test

Hold the egg to your ear and shake it gently. Silence means the white is still thick and the contents are firm. A sloshing sound means the white has thinned considerably with age.

3. The plate test

Crack it onto a flat plate rather than into a bowl. A fresh egg gives you a tight, high-domed yolk surrounded by a thick, cloudy white that stays close, with a thinner outer ring. An old egg spreads wide and flat, and the yolk flattens and breaks easily.

The cloudiness in a very fresh white is dissolved carbon dioxide and is a good sign, not a bad one.

4. The smell test

Final authority, and it never lies. Crack a suspect egg into a separate bowl before adding it to anything. A bad egg announces itself instantly and unmistakably. If in doubt, throw it out. An egg costs Rs 50; a night of food poisoning does not.

How long do farm eggs actually keep?

An unwashed egg keeps its cuticle, the natural coating that seals the pores in the shell. That coating is why a genuine farm egg lasts far longer than a washed commercial one. In a cool spot out of direct sun, expect around three weeks at Islamabad room temperature, and considerably longer in the fridge.

Two practical notes. Store them pointed end down, so the yolk stays centred and away from the air cell. And once you refrigerate an egg, keep it refrigerated, because a cold egg brought to room temperature sweats and that moisture carries surface bacteria straight through the shell.
